Another Christmas Day done and dusted…the feast will continue well into the New Year.

We were all packed into my daughter’s Sydney rental, eight adults, one teenager and five littlies wearing paper crowns and having fun. Too hot to be outside, we all clustered by the air conditioner. Much fun and good cheer. Now home again, ten under the roof.

Santa gave me a camera bag and lens hood. I can pretend to be paparazzi with the bird life.

I love Christmas and I love my family to bits!

China could conceivably stabilise at some point with increased domestic consumption, although no Asian economy has really managed to do that to any great extent.. What it would not do would hold out the promise of rising living standards for the hundreds of millions needed to prevent political instability.

You couldn’t pay me to drink the US version (not that I’ve done much travelling lately). It’s been like that since the New Coke debacle. When they said that Classic Coke was the original version they lied. What else is new.

QGC has a woeful name among landholders in Queensland. If a fraction of the first hand annecdotes I have been told by drillers, wireline loggers and professionals are true, then deserved so. The buyout by British Gas did curb some of these excesses but reputations so far lost are never recovered.

On Trains, lotsa arse covering going on now hard to see that changing. Pig shooters are interesting angle, these kind of feral f@%&wits are a problem everywhere. Know of a case near Townsville where they were cutting through fences, were caught out by hidden cameras. Idiots left numberplates on & it wasn’t hard to track them.

If Peter Zeihan is right, China is done and dusted. He reckons the age pyramid turned about a decade ago, and the population was over-estimated by about 200 million plus. The provincial governments lied in order to receive more funding from the central government. They’re fucked and in a very bad position. We may have already seen peak China.

I dunno, I drink Coke Zero and have it a few times a week. I kept asking for Coke zero or Coke No Sugar over there and it’s not as common as here if my anecdotes are any guide. They would offer Diet Coke, which I really don’t like much.

I don’t mind their regular Coke, but I hardly ever drink it.

Mexican Coke, like Oz Coke, is made with Cane sugar. The only place in the US that makes Coke with Cane sugar is Dublin, Georgia. The US also forbids them from selling Dublin Coke outside the State. A lot of Dublin Coke runs are organised just like the moonshine runs over County lines. LOL! True story people. Look it up for yourselves.
Funnier still is the labelling of sugar. Here in Oz, sugar is sugar. In the States, because of the preponderance of Corn Syrup and Beet sugar, sugar from Sugar Cane has to be labelled as “Cane” sugar.

Baked goods made with Cane sugar sell for premium prices.

If you need to know how I know this stuff without ever having set foot in the US, I am a baker, it is my job to know these things.

Corn Syrup is the US version of Glucose. If you have ever tasted it, it is almost tasteless. To use Corn Syrup means having to add a phenomenal amount to make any product sweet. If using Cane sugar, you only need to add about one quarter or less to achieve the same sweetness. The taste difference though is huge.
The use of Corn syrup to sweeten everything is because growing Corn is heavily subsidised in the US. The only Cane grown in the States is in Hawaii. So, not cost effective.

If you buy a bag of what we call granulated sugar in the US, unless stated otherwise, it is made from corn and/or sugar beet. Awful stuff.

When I use an American recipe for any baked good, I have to halve the amount of sugar used unless it specifically asks for the use of Cane sugar. The same goes with any of their preserving recipes. Jams and pickles in US recipes use more than twice the amount of sugar as you would use in an Australian recipe.

They aren’t dumb too, unlikely to march into vassal states even though Xi is restless as the sanctions would kill them.

Also probably take a chunk out of our resources industry too but we have other customers in Asia equally as voracious.

I am not into economics but have worked & travelled widely as well having a liking for geopolitical books that Asain airports love stocking.

Mmm…if I were a betting man I’d wager that the continental USA produces roughly as much sugar cane per year as we do. But it has less market penetration domestically because in American terms the tonnages are small.

Correct. Also, the use of corn syrup has been a huge factor in rise of obesity in the US over the last fifty years. Remember, corn syrup isn’t just used in “sweet things”, it’s also used in almost all refined food production in the US.

The times we’ve visited the US (west of the Mississippi only – old US pal said I wasn’t missing anything to the east) bread was a sickly sweet, mainly air filled disaster. I’m a fan of German black bread.
When discussing corn syrup make the distinction between that and high fructose corn syrup.

Saw Dover’s Brazil link above, nice. Fiji has called out the army as well in another disputed election.

At 6pm & as every night Thai national anthem blares on the TV. Very polished and with a healthy offering of views of the military. No probs, standard for this region.

Just read in Bangkok Post Shinerwatra’s daughter is in line to win the election due in May. Also a political amnesty bill is in front of parliament again.

Shinerwatra’s daughter has a policy to raise the minimum wage from 300 baht to 600 baht a day. Which would pretty well much destroy the predominantly family oriented farms and small business here.

My prediction is if she wins there will be another military takeover before she goes full term. Both the monarchy and military here despise the Shinerwatra family.

For the record I am not supporting either side. The Thai army & more so monarchy are held in utmost regard especially in rural areas.

We certainly do live in interesting times.

I get the impression he felt not normal. – having a mother who raised him while the father went back to Italy. He was outside normal . the local bakery produced this terrible stuff with a yellow complexion that was either cornbread or similar. But if you went to a good cafe or restaurant you were given lovely French or Italian bread that was delicious. To find a bakery that produced the latter you had to travel to more salubrious neighbourhoods on the upper east and west.

And here I was thinking ‘The Marble Rye’ episode of Seinfeld was just something thought up by ponytails.

(hmm, two x gravy)

potato salad w dill, capers and lemon, green beans w shaved fennel and peach mostada dressing, cous cous feta, and semi-dried tomato

passionfruit and mango baked cheesecake, plum pudding, shiraz and raspberry layered jelly, real vanilla custard and ice cream and cream and more cream and ice cream

wrapped it up with hand shaken whiskey sours and iced coffees

the missus and MiL just gave up and crashed

Well yes. RSV used to be called pertussis but after the pertussis/diphtheria vaccine came out doctors refused to diagnose that so they employed ddx. RSV and croup were used instead. Same range of symptoms.

Diphtheria is now called strep and pharyngitis.

Now, please tell me how “they’re different ‘cos of the different germs”.

Almost nothing in the media about the hoons outside the Chaldean Catholic Church on Christmas Eve in Melbourne’s north. Burnouts, loud revving of cars, screeching tyres, blasting of horns in the street just outside the church entrance made it impossible for worshippers. This kind of low level nuisance provocation has been going on for a while now and is obviously part of our rich multi culti heritage. Similar incidents happen at Christian sites everywhere at this time. Bethlehem, for instance.

Re Berroca, I lived on them in my hard partying days. One of those and a bacon and egg roll for breakfast usually did the trick. (Coffee and ciggie a given).

You can “recycle” PET bottles as cloches for seedlings. Cut them where the plastic tapers for the neck. Work a treat. This year they were useful in deterring the water hens from nipping off the new dahlia growth as it emerged tentatively from the soil. Put a weight on top and they make a mini glasshouse.

Like Pogria, I always reduce the sugar in US recipes. My teeth ache just reading the card.

Leak is on the money. Here the children are strictly limited in technology use otherwise they’d be on it all day. It does have its benefits though. Just watched the son in law and grandson doing their morning exercises – prompts from the iPhone, natch. I heard an electronic voice say “this is for strength and endurance” and had a peek – out on the porch was dad and the seven year old going through their paces!

Brussells Sprouts are excellent eating when picked at the right stage and cooked properly. Unfortunately it seems that most aussies never really learn to cook. All the vegies my mum made were boiled to death, all flavour and texture eradicated. It was the same at all me relatives and friends houses. I can honestly say that except for roasts and desserts I never had a decent home cooked meal until my 20’s. I didn’t know how good food can be till I could afford to eat at restaurants.

Wine and spirits businesses are calling for rapid government intervention after charges for mandatory glass recycling skyrocketed, wiping out some companies’ profits.

Companies that use glass bottles are legally obliged to buy so-called packaging waste recycling notes under a 25-year-old system that aims to ensure businesses that produce and use packaging also fund recycling.

The scheme is designed to operate as a market similar to carbon credits, and companies in the packaging supply chain are legally obliged to purchase notes in proportion to the packaging they handle

But companies say the market is opaque and costs for the notes have escalated in recent years, with little evidence of a corresponding increase in recycling.

One company, Kingsland Drinks, said its bill for packaging waste recycling notes for glass had risen almost tenfold to an estimated £2.2mn since 2018, mainly because of a steep rise in the cost per note.

Unless there is a dramatic change in prices or a government intervention, with its other recycling costs Kingsland faces an estimated £2.8mn bill for 2022, which will wipe out its entire profits.

Accolade Wines, the UK’s largest wine supplier, faces a £2mn bill this year, according to its chief supply chain officer, Derek Nicol. He said prices for the notes were “more volatile than bitcoin” and the system was “not fit for purpose”.

have you ever read an American jam recipe? They specify cup for cup measure, sometimes an extra two cups of sugar! Still don’t seem to have twigged that sugar weighs more than fruit if you use volume measures.
OZ and British thankfully use weights. These days I can work out in my head what fruit needs what amount of sugar depending on natural pectin content. There is a very good Rhubarb patch on the farm that is crying out to be made into pies, crumble and Rhubarb and Ginger jam.

Diversity at the restaurant is fine, diversity of an entire culture leads to the above. Culture is the ‘operating system’ of your country. More than one OS creates conflict, incompatibility, friction and violence.

Think of the ‘road rules’ example – one set of road rules and everyone knows what the next person is likely to do. Multiple sets of road rules leads to confusion, ‘accidents’ and injuries.

Reading back, I agree with those who found US mass produced bread inedible, because it is so sweet. Mcdonalds burger buns used to be similar (haven’t eaten one for years, so may have changed.) A lot of US food is loaded with unnecessary calories which, to an outsider, do not improve the taste. Things like peanut butter, the aforementioned bread, and even bacon is sometimes drowned in maple syrup. No wonder they are so fat.

When I was there, Jewish delis were my go-to for lunch especially – delicious sandwiches on rye or other unsweetened breads. As for the desserts, on the rare occasions when I ordered one, I could never finish it. They were humongous.

A lot of Americans eat a huge amount of sugar as part of their normal diet. I’m not getting into the varieties of sugar debate here, because it all gets turned into glucose in the body. Nor do I think that it is toxic. But, it represents a gazillion calories a year for no good purpose.

Son and DiL expecting baby in April. The responsibility seems to have kicked in already. They were left leaning especially as DiL is Uni lecturer. Son was relating a problem with one of his 230 staff. The problem being solved by doing everything by the book and then telling them being woke is not a reason not to do your job and if you continue to not do your job we will cease paying you. They have also discovered that being Anglo’s doesn’t mean you are responsible for the ills of the world. DiL has found she is rascist because she requires submitted work to be in English and the person can write competently. This from someone of mixed perentage and born here. This time last year she would have been holding their hand sympathising with them. Maybe its just an age related thing but the change happened as soon as parenthood was on the horizon.

The issue with glass is it needs gas heating. So recycling is competing with electricity generation.
Meanwhile “lock the gate” is increasing, so less gas supply. Which is going to get even worse because of Albo’s price cap.

It was interesting to see one wine brand switching to polycarbonate bottles. I wasn’t going to buy them because they say “Saving the Planet” on them, and anyway that wine was fairly ordinary.

It’s every form of government employee:
Politicians, medical staff, public transport, police, education, ect..

Boxing Day morning fun.
Handle fell off the roll tarp on the mother bin at 7.30. The shaft for the handle was never seated deep enough into the alloy pipe that wraps the tarp and the bolt ripped through the end of the tube.
Grind back the land on the stub shaft and then drill and grind out a longer recess for the locking groove in the pipe.
Back on the bin and loading the truck. Me very sweaty for so early.
